BETTER SERVICE IS BORN IN A BARN

ResPAK from CST is helping to make one of Kent's oldest buildings and best restaurants even more efficient.

ResPAK, one of the most advanced software packages in the hospitality industry, is helping Damon and Sarah Dalmedo turn The Barn, one of the oldest buildings in Rainham, Kent, into one of the county's best restaurants. The couple moved to The Barn recently when the lease on their popular town-centre restaurant expired. Chef/patron Damon describes the food at The Barn as 'modern English'. "We make everything in-house," Damon adds. "Our own bread, our own ice cream, sorbets, petit fours and pastries; I go to market twice a week and we buy a lot of produce direct from local farms, organic when we can get it. A lot of the vegetables even come from our own garden at home. Our dishes are based on simplicity, allowing the flavours of natural ingredients to come through." "The main part of the restaurant is a barn," says Sarah. "It's a 17th century building from East Sussex, which was brought here in the 1970's.

The then owner was a shipbuilder and he used the hull of a boat as the roof on the extension he added to it." It appeared the old way was also best for managing the front of house - for example, writing bookings in a diary - until they discovered the ResPAK Reservation Management System from Call-Systems Technology (CST) and decided to take advantage of the extraordinary information management it provides.

The PC-based ResPAK system gives them not only detailed booking information but provides them with seating plans, advance and walk-in reservation services, table status information and a comprehensive customer database.

Barn Restaurant ResPak CST's integrated package also incorporates reporting and marketing modules helping the Dalmedos to manage day-to-day operations and to create effective and targeted communications campaigns. The open nature of ResPAK means that they could link it with the Jetz Point Of Sale system to capture customer billing data and to monitor the precise status of reservations from customer arrival, the serving of each course and finally payment and customer departure; all leading to more efficient table turnover and timely information for any waiting customers.

"After so many years of doing things manually, it took a little while to get used to," Damon admits. "But CST trained all our staff in its use.

Personally, I'm not too good with computers, so it's probably taken me a bit longer. But if there were any teething problems CST were here to help us get it right and they call us every few days to see if we have any problems.

ResPAK seems tailor-made to fit our business." The Barn showcases ResPAK in a smaller restaurant environment, with core functions that are affordable, easy to use and enhance almost any size of restaurant operation. And the ResPAK system is 'scalable'; it has also been installed in much larger operations, such as Mandarin Oriental Hyde Park in London, and The Scotsman Hotel in Edinburgh.
